Ingredients:
- 1/2 head of cauliflower
- 1/8 cup of cilantro
- juice of one lime
- 1 Tbsp olive oil (I want to try coconut oil one day)
- Put cauliflower into a food processor and pulse until it has a rice texture
- Heat olive oil in a skillet over med heat, add cauliflower and cook stirring occasionally for 5-10 minutes, turn of heat when done.
- Add cilantro and lime juice, and stir. Serve.
